Masala Chai Cookies

Ingredients

1 cup plain flour

¼ cup powdered sugar

¼ cup unsalted butter (softened at room temperature)

3 tablespoons Chai Quarters Masala Chai mix

2 tablespoons cold milk (optional)
Method

Add the powdered sugar to the softened butter and whisk until light and fluffy.

Add the flour and chai mix, then gently combine using a spatula until a dough forms.

If needed, add a few spoons of cold milk to help bring the dough together.

Wrap the dough in cling film and refrigerate for one hour.

Preheat the oven to 170°C.

Dust some flour onto parchment paper and roll out the dough.

Use a cookie cutter to shape your cookies.

Bake for 15–20 minutes, or until the cookies are lightly golden.

Masala Chai Tiramisu

Ingredients

300ml double cream

½ cup mascarpone cheese

¼ cup powdered sugar

8 heaped teaspoons Chai Quarters chai mix

1 pack sponge finger biscuits (Savoiardi)

Cocoa powder for dusting
Method

In a bowl, add the double cream, 4 heaped teaspoons of chai mix, and powdered sugar. Whisk until slightly thickened.

Add the mascarpone cheese and gently fold until smooth and combined.

Using the remaining chai mix, prepare the chai following the directions on the package.

Dip each sponge finger biscuit into the chai for 5–8 seconds, then layer them into a dish.

Spread a generous layer of the cream mixture on top.

Repeat the layering process with more soaked biscuits and cream.

Finish with a smooth top layer of cream and dust lightly with cocoa powder.
You can serve this immediately or chill it in the fridge for a little while to allow the flavours to develop further.
